Chef Will Holland earned a Michelin star before the age of 30, was named in The Good Food Guide’s list of their predicted “ten most influential chefs of the next decade” and was awarded an Acorn Award as one of the industry’s highest achievers under the age of 30. In 2016 Will was named ‘UK Restaurant Chef of The Year’ by the Craft Guild of Chefs in their annual awards which are often dubbed ‘the chef’s Oscars’.


Will has appeared on national television programmes including numerous appearances as guest chef with James Martin on Saturday Kitchen, beating the Hairy Bikers on their “Food Tour of Britain” and was the central region champion on BBC’s Great British Menu. He has featured in many publications such as The Telegraph, BBC Olive Magazine and GQ Magazine.


In 2014 Will opened Coast Restaurant, Saundersfoot as Head Chef. Coast is a stunning purpose built restaurant situated on the shoreline of Coppet Hall beach, Pembrokeshire. At Coast, Will heads up his team and uses his years of experience in some of the UK’s best hotels and restaurants to create dishes using the best produce available. Coast was named ‘AA Restaurant of the year Wales 2015 – 2016’.


In 2017 Will joined The Atlantic Hotel as Executive Chef, starting a new chapter for dining at the hotel. Will is passionate about the use of local, seasonal ingredients believing that amazing dishes are the result of amazing produce. Inspired by the rich and varied ingredients found on Jersey and in its waters, his menus are a celebration of the land and sea.
